Shrimp Street Tacos
Yield: 6 servings
Ingredients:
shrimp, medium size 16 oz
olive oil 2 tbsp
sweet onions, diced 4 oz
jalapeño, fine dice, seeds removed 2 tsp
chili powder 1 tsp
cumin 2 tsp
kosher salt to taste
black pepper to taste
Bella Sun Luci Salsa BM mix 4 oz
corn tortillas, warm 12 each
Garnish:
avocado, diced 1 each
red radish, diced small 4 oz
cilantro, chopped 2 tbsp
Method:
1. Heat skillet, add olive oil, sauté onions & jalapeños for 3 minutes.
2. Add shrimp, seasonings and cook for 2 minute.
3. Add BM mix and simmer 4 minutes. Remove shrimp, reduce sauce by 50 %.
4. Add back shrimp to sauce, check seasoning & keep warm.
5. Wrap tortillas in foil and warm in 350 degree oven.
6. Make tacos and garnish to preference.
