Chicken Tikka Masala

Yield: 6 servings

Ingredients:

chicken breast, large dice 1.5 pounds

kosher salt to taste

black pepper to taste

butter 1.5 tbsp

sweet onions, small dice 6 oz

garlic cloves, minced 3 each

ginger, minced 1 tbsp

garam masala 1 tbsp

chili powder 1 tsp

cumin 1 tsp

turmeric 1 tsp

tomato sauce 4 oz

bella sun luci chipotle BM mix 4 oz

coconut milk 14 .5 oz can

frozen peas 6 oz

cilantro, chopped 2 tbsp

Method:

1. Season chicken with salt & pepper.

2. Melt butter in pot, add onions, garlic & ginger, sauté until soft.

3. Add spices & cook for 4 minutes on medium heat, stir often.

4. Add chicken, cook for 4 minutes, add BM mix, tomato sauce & coconut milk.

5. Simmer covered for 15 minutes, add peas, stir and let rest for 10 minutes add cilantro.

6. Check seasoning and serve over your favorite rice dish.
